Eden Organic Umeboshi Plums are the revered ‘Nanko’ variety from organic family orchards of the Wakayama peninsula of Japan. Traditional brine and shiso leaf pickled using only original, noncommercial methods. These are the finest Umeboshi available in the world.

Umeboshi are a bracing, fermented food and condiment. Their puckering sour taste comes from beneficial organic acids that systemically enliven and strengthen cellular level chemistry. Experienced chefs make sauces and dressings sparkle with them.

Hand-harvested, unripe plums at the peak of their acidity are used to make umeboshi. First, they are sea salt brine-pickled for a month and sun-dried for three days. Then again, they are brine-pickled with red shiso (beefsteak leaf), which imparts a pink/red color and beneficial phytonutrients. Sun-dried finished whole pickled plums are hand-placed in 4.5 oz. glass jars, capped, labeled, cased, and shipped to Eden Foods.
