Tender skin, smooth and creamy texture, and extraordinarily flavorful. Cooked up with nothing more than salt and pepper, the color is gorgeous. And because they're super fresh, they cooked up very quickly after soaking overnight.
Health, ethical, and environmental benefits aside aside, the quality of Eden's beans alone justifies the higher price tag.
