Eden Organic Matcha is harvested in April from the bush Camellia sinensis when the leaves are most tender. Steaming the leaves prevents oxidation and ensures a bright green. The stems, twigs, and veins are removed from the leaves, then cutting, winnowing, and drying prepares them for one of the 1,300 small granite stone mills. For optimum flavor and efficacy it takes about one hour per mill set to make thirty grams of this organic matcha. After grinding, the matcha is filled into 30 gram tin plated steel cans. At the bottom of the can is an antioxidant protector, an oxygen absorber. It helps protect the antioxidants by absorbing oxygen. It also keeps the matcha bright green. Worldwide research points to green tea's antioxidant polyphenols for its potent beneficial properties. Epigallo-catechin gallate (EGCG: also antibiotic) is the most prominent of these. Together with tannins and flavonoids they are collectively called 'catechins' and account for about 40% of its dry weight.

Recently they discovered that L-theanine, a nonessential, non-protein amino acid naturally present in the green tea bush Camellia sinensis and the main compound responsible for the unique flavor of green tea, enhances learning ability, induces relaxation, and inhibits caffeine stimulation. Eden Organic Matcha contains 16.7mg of L-theanine per 1g serving (1 bamboo scoop). Because of the caffeine in Matcha (50 percent less than in coffee), it is an adult drink not recommended for children.
