Organic Eden Pistachio Pocket Snacks are the Kerman variety, famous for outstanding flavor, family farm organically grown in the Central Valley of California. Pistachio trees produce large clumps similar to grape clusters, and like almonds they have a soft outer hull. Pistachios are harvested in late August to early October when the outer hull turns a rosy color and the shell within splits open, an indication that they are completely ripe. Harvesting when perfectly ripe ensures the best tasting pistachios.
Harvesting is done by machines that shake the tree causing ripe pistachios to fall into a canvas catching frame. The frame prevents pistachios from ever touching the ground, which causes bruising and staining. From the catching frame into a bin, they go to be hulled. It is important for this to happen very soon after harvest for the best flavor. After hulling the nuts are dried, sorted, shelled, and shipped to Eden Food's production facility where they are rotary oven roasted before misting with our finest sea salt.
