Hard Red Spring and Hard Red Winter Wheat Triticum aestivum L. are the same grain planted in different seasons. Spring Wheat is a fast growing crop. It's sown in Spring and harvested in late Summer or early Fall. The gluten in spring wheat makes the best bread.
