Fenugreek Trigonella foenum-graecum is cultivated worldwide and used both as an herb and a spice. Its most common use is in making hot spicy curries and dhal (spicy lentil or bean dishes), and it is used in pickling. It has a warm, penetrating flavor; when ground it has a spicy, pungent aroma with a slight bitter aftertaste. Blended with cinnamon, coriander, cloves, chilies, turmeric, pepper, cumin, and other spices, it makes curry powder. It is an ingredient in Panch phoron, the Indian five spice seasonings.
