This ancient grain is not a modernized wheat. Spelt has a strong hull that clings to the grain and is difficult to remove with thrashing machines. This hull is a great asset, protecting the grain from insects and pollutants, while helping retain nutrients, moisture, and freshness during storage. Spelt requires very little soil nitrogen to grow well, and naturally tend to choke out weeds. An ideal crop for organic agriculture.

EU studies have reconfirmed what St. Hildegard knew, spelt is easier to digest than other grain.
A significant quality of spelt is that it is allergy friendly. Although it does contain some gluten, it is different than modern wheat. The gluten in spelt is highly water soluble, and much easier to digest for those with allergies to modern wheat. Research has found, as with kamut, spelt can be an excellent substitute for modern wheat for those with allergies.
USDA Human Nutrition Research Center at Tufts University say, "Whole grains regulat blood sugar by slowing down the conversion of complex carbohydrates to sugar. In fact, low-glycemic index foods such as whole grains reduce hunger and can help to control weight."
