Use and Care
Before first use, wash with soft nylon brush dipped in dish soap, rinse. After each use, always hand wash and dry before putting it away. It is not dishwasher safe. Over time, the tin coating will develop a darkness that attests to its use. If the patina is bothersome, use a cream cleanser and nylon brush, or a solution of vinegar and the same amount of salt and a cotton swab.
Hold the grater in one hand and the vegetable in the other. Gently rub against the grater in a back-and-forth circular motion to get the desired amount.
The origin of these graters dates to the early 1600s when major improvements in Japanese culinary tools took place. The ‘hon-grazing technique’ is the art of using a chisel to lift the grater cutting teeth out of the copper.
