History
Khorasan Triticum turgidum spp. T. turanicum is ancient wheat native to Asia Minor and Egypt. It is named Khorasan after the largest province in Persia in its northeast region where it once dominated agriculture. Khorasan in Persian means 'place of the sun.' Other common names are Kamut trademarked in 1990, Camel's Tooth, Oriental, Prophet's, or King Tut's wheat. Introduced to the U.S.A. in Montana in 1949, its golden grains are three times the size of modern wheat. It has the highest protein of all wheat, is closely related to the ancient grain spelt, and is a relative of durum wheat. Organic Eden Kamut Wheat Flour is not wheat free or gluten free. However, because its protein is easier to digest, those sensitive to modern wheat often enjoy it.

USDA's Human Nutrition Research Center at Tufts University say, "Whole grain regulates blood sugar by slowing down the conversion of complex carbohydrates to sugar.
