Turmeric Curcuma longa a bright yellow/orange spice from dried, ground root of a South Asian plant related to ginger. It is widely used in Indian, South Asia, and the Middle East. It has recently become quite renowned for its potent health benefits. In medieval Europe it was known as 'Indian saffron' because it was widely substituted for expensive saffron. It has a mild peppery, bitter flavor, and mild fragrance that is reminiscent of ginger. Its most frequent use is in curry and Indian dhal. It gives yellow mustard a bolder color.
