A ready-to-use table condiment of roasted tan and black sesame seed, green nori flakes, and dried pickled red shiso (beefsteak) leaves. Its Japanese name is 'furikake'. For centuries Japanese have combined sesame seed and land and sea vegetables to create tasty fun condiments and foods rich in minerals and amino acids. Furikake is a time tested favorite, an easy way to enjoy benefits of sesame, shiso, and nori sea vegetable. Very low sodium with 20mg per serving, and fat free.
To make Eden Shake, red shiso leaves Perilla frutescens are pickled in umeboshi plum vinegar and sea salt. The leaves are then dried, chopped, and ground. Tan and black sesame seeds are roasted in separate batches due to differences in their oil content. The shiso powder and roasted sesame seed are combined with dried green nori flakes and gently blended. Eden Shake is traditionally prepared and contains no artificial ingredients, colorings, or preservatives.
The green nori flakes are seaweed Enteromorpha and Monostroma species with a very mild flavor known as 'ao-nori' or 'hitoegusa' in Japan. It is a different species than Porphyra tenera and P. yezoensis that is used for Eden Sushi Nori, Eden Nori Krinkles, and Eden Spicy Nori Strips.
Shiso Perilla frutescens, of the mint family, is a small bush with dark red or green heart shaped leaves. The red leaves, known as 'beefsteak' leaves, are used in Eden Shake and Eden pickled umeboshi plums. Besides adding color, red shiso contains a natural preservative called 'perilla-aldehyde' which has over 1,000 times the strength of commercial synthetic preservatives, and when ingested contributes to digestive health.
