Eden Organic Rye Flakes are roasted and rolled. Whole grain rye is sprayed with water and gas flame roasted in a ceramic kiln. Immediately after roasting the grain is rolled into flakes. The flakes are packaged at Eden's AIB 'Superior' rated facility in one pound nitrogen flushed, reclosable, standing pouches.
History
Rye Secale cereale is a relative of wheat, but not a wheat. A rich, robust grain with a dark brown slender kernel, rye emerged as a wild seed bearing grass and was first cultivated as a cereal grain around 1,000 B.C. It is believed to have originated somewhere between the Austrian Alps and the Caspian Sea. For centuries rye was the staple bread making grain of northern Europe and western Asia and remains so today in the rugged northern climates. Rye is one of the unique grains that offers 'complete' protein containing all of the amino acids, including all of the essential ones.
