As with true organic farming, our traditional organic malting process is performed in cooperation with Nature. While others use pharmaceutical, artificially produced enzymes, gibberellic acid, and potassium bromate to speed and increase production, our centuries old process uses only the grain's own enzymes and the knowledge and care of artisan maltsters.
The grain is spread out and steeped in water. After steeping is completed, the barley is allowed to germinate and sprout. During the germination process, more than 140 enzymes are created. These enzymes hydrolyze carbohydrates into sugars and break down proteins into amino acids. At just the right time, when sugar levels are optimal, the sprouted grain is kiln roasted rendering it non diastatic by stopping the enzymatic action, and the malt develops color and flavor. The grain is cured, then mashed, cooked, filtered, concentrated, and packed. The process takes 30 to 45 days. We like slow food.
The sugar profile of Eden Barley Malt Syrup is approximately 74.5 percent maltose, 18.9 percent glucose, 2.6 percent sucrose, and 3.9 percent fructose. It has 15 grams of carbohydrate and 8 grams of sugar per serving with no added sugars. A whole grain sweetener that is about half as sweet as refined sugar and has a consistency and flavor similar to that of molasses. If a lighter, sweeter flavor is desired, Eden Organic Barley Malt Syrup can be combined with other organic grain sweeteners or organic maple syrup.
Eden Barley Malt Syrup carries the distinct character of the grain. It is a versatile sweetener with hundreds of uses. When substituting Eden Barley Malt Syrup for refined white or brown sugar, use 1 1/3 cups of barley malt for 1 cup of sugar, and reduce the liquid in the recipe by about 1/4 cup. Using 1/4 teaspoon of baking soda for each cup of barley malt in baking, helps produce lighter baked goods.
